Well-researched and clearly written, this book describes food additives and how they used to trick consumers of packaged and processed food into believing that industrial kitchens and food production is liked a scaled up version of home cooking.

Among others, artificial sweeteners, flavorings, and colorings are used to create a taste that fools their customers.
